5 Homemade Salad Dressings

There's no better time than Summer to enjoy delicious homemade salad dressings.  And one of our favorite things to use as a foundation is our salsa!  

Meet Caroline, my favorite sous chef!

She's a master at measuring and mixing!  And we all know, when children help with the preparation, they are more interested in eating it! So if you have some salad haters, you might want to invite them into your kitchen to help create the dressings!

We used our empty salsa jars to hold our freshly made dressings.  Just wash them out with hot soapy water and store for creative uses like homemade dressings!

 

Caroline helped make fun "jackets" for all the jars to give them a special homemade touch!  You can do the same with some brown paper and kitchen twine!

Below you will find five recipes:  

French Dressing; Mediterranean Vinaigrette; Everything Dressing; Margarita Dressing; Cranberry Orange Vinaigrette

 

French Dressing (yield 1 1/4 cups) We like to toss this on our taco salads!

1 cup My Brother's Original Salsa

1/4 cup sour cream

1 tsp. sugar

juice from 1/2 lemon freshly squeezed

1/4 cup olive oil

1/2 tsp. salt

Combine all ingredients in jar, tighten lid and shake until mixture emulsifies.  Store in the refrigerator.  

 

Mediterannean Vinaigrette (yields 3/4 cup)   We like to use this on anything Greek!

2/3 cup Helen's Table Cucumber Tomato Salsa

1/3 cup olive oil

1 Tbsp. Dijon mustard

1 Tbsp. shallot finely minced

Combine all ingredients in jar, tighten lid and shake until mixture emulsifies.  (If you like a smooth vinaigarette - pulse in blender).  Store in refrigerator.

 

Everything Dressing (yield 1 1/4 cups)    This isn't just a delicious creamy salad dressing...it's killer on hamburgers, sandwiches and dipping anything into!

1 cup My Brother's Original Salsa

1/3 cup mayonnaise

2 Tbls. prepared mustard

Combine all ingredients in a jar, tighten lid and shake until mxiture is thoroughly combined.

 

Margarita Dressing (yield 1 1/2 cups)   (This also makes a great marinade for chicken...grill and make a chicken fajita salad!)

1 cup My Brother's Orignal Salsa

1/2 cup olive oil

juice of 1/2 to 1 whole lime

salt to taste

Combine all ingredients in a jar, tighten lid and shake until mixture is emulsified.  

 

Cranberry Orange Vinaigrette (yield  1 1/4 cups)  Cranberry isn't just for winter....it is delicious on our Citrus Salad, but it's good on any salad!

1/2 cup Helen's Table Cranberry Orange

1/2 cup olive oil

1/4 cup white balsamic vinegar

salt to taste

Combine all ingredients in a jar, tighten lid and shake until mixture is emulsified.
