Chocolate Walnut Tart with Bourbon Cream Sauce

Dreaming of being at the Kentucky Derby?  Watching the horses line up....wearing fancy hats....sipping on mint juleps.... servers waltzing by with decadent chocolate desserts....chocolate desserts that became so famous the name was trademarked!  So we dare not mention...but we can be inspired.....inspired so much that we've created this lovely choclate tart for you to serve to your guests on Derby Day....and when the two minutes of racing are over....you'll still be lingering over your chocolaty, nutty tart drizzled with silky bourbon cream! Dream on!

 

Chocolate Walnut Tart with Bourbon Cream  (serves 12)

For the tart:

1 prepared pie crust*

1/4 cup flour

1 cup cane sugar

2 large eggs

1/2 cup butter, melted

1 1/2 cups walnuts, chopped

12 ounces semi sweet chocolate chips

1 Tablespoon vanilla extract

1/2 teaspoon salt

egg wash (1 egg beaten with 1/2 teaspoon water)

 

For the Bourbon Cream:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 Tablespoon bourbon

 

On lightly floured surface roll out dough to a 12" circle.  Line an 11" tart pan with tart crust, gently pressing onto bottom and up the sides.  Trim any excess.   Place in the refrigerator while you prepare the tart filling.  (brush with egg wash just before filling)

Whisk flour, sugar, salt together in mixing bowl.  Stir in butter, eggs and vanilla. Add walnuts and chocolate.  Pour mixture into the egg washed tart crust and spread evenly.

Place in preheated 350* oven for 35 minutes.  Cool on wire rack.  While tart is baking, prepare Bourbon cream:  Using hand mixer, or stand mixer whip together the heavy cream and powdered sugar until soft peaks form.  Gently stir in bourbon.  Cover and chill until ready to serve.

Pie Crust (makes 2):  You can use a prepared pie crust from your local grocer...or make your own.  Here's my fave go to crust recipe:

2 1/2 cups all purpose flour

1 -2 Tablespoons sugar

1/2 teaspoon salt

8 Tablespoons butter, chilled and diced

8 Tablespoons shortening, chilled and diced

7-8 Tablespoons cold water (no ice particles)

Whisk together flour, sugar, salt in mixing bowl.  Toss in butter and shortening and quickly coat each diced piece with the flour mixture.  Using your hands, press butter and shortening pieces between your fingers until all have been incorporated into the flour.  It will look like a bowl of crumbly mess!  Add cold water and continue pressing mixture together with your hands until it all comes together.  Divide into two sections.  Flatten into a disc.  Wrap in plastic wrap and refrigerate at least one hour before rolling out to desired shape.  Can be placed in freezer bag and stored in freezer for up to 3 months.  Thaw in refrigerator.
