Pineapple Mint Cooler

What's not to love about a pineapple drink....after all pineapples are the universal symbol for hospitality....so there you have it....it must be the perfect party drink especially if you need one that can be with or without the rum! 

 

Pineapple Mint Cooler  (yields 3 quarts) 

1 - 64 ounce can pineapple juice, chilled

1/2 cup cane sugar

1 cup mint leaves (packed)

1 cup fresh pineapple chunks

1 - 32 ounce club soda, chilled

mint leaves and lime wedges for garnish

Cocktail option:  1 ounce rum for every 8 ounce serving of pineapple mint cooler.

 

Make a simple syrup:  Combine 1 cup pineapple juice with sugar over medium heat til sugar dissolves.  Cool.

In bottom of large pitcher, muddle mint leaves and pineapple chunks.

Add chilled pineapple juice, simple syrup. Gently stir.  Top with chilled club soda.   Serve over ice and garnish with lime wedges and mint leaves. (If making this with rum, just pour shot of rum in bottom of each glass before adding cooler mixture)
