Sparkling Strawberry Limeade

Move over Mr. Lemonade. There's a new drink in Summertime town. 

And this special little red head in our family, is the inspiration!

She loves to be in the kitchen slicing, dicing, mixing, and fashioning all sorts of dishes for us.  But, she doesn't eat or drink anything with Red #40 dye in it.

So she he and her mom came up with a delicious Sparkling Strawberry Limeade for all those hot Summer days that are already upon us. 

Pretty to look at, fun to make, scrumptious to drink! And yes, no Red #40!  So gather the little hands around your table and mix up something the whole family will enjoy!

Sparkling Strawberry Limeade (yield approx. 2 quarts)

2 cups fresh strawberries with caps removed

1 cup sugar

1 cup freshly squeeze lime juice, chilled

2 liters of lemon-lime soda,chilled

garnish:  mint leaves, thinly sliced limes

optional:  fun loving straws!

Place fresh strawberries in blender with sugar.  Pulse until pureed. (you can do this by hand with a whisk - just will take a little effort) Let stand for 30 min at room temp with lime juice. Chill. Just before serving, pour strawberry mixture into large pitcher. Add lemon-lime soda slowly.  Give it a slow stir with long wooden spoon.  Serve over ice and garnish with mint leaves and lime slices.  Yum!
