Winter Whites

Winter white isn't just for wearing!  We're dressing up our tables with white deliciousness. Here are three delightful recipes to get you started.

First -  our winter salad of romaine, endive, pears, and goat cheese drizzled with a white balsamic vinaigrette. Light and crisp - just what Dr. Winter ordered to cure a dreary day!

Mid Winter’s Salad Dream   Serves 4

1 heart of romaine

3 endive stalks

1 bosc pear

½ cup toasted pecans

4 oz. goat cheese, crumbled

¼ cup white balsamic vinegar

1/3 cup olive oil

2 tsp. mild honey


On a serving platter layer in this order:  romaine, endive, pear, pecans, goat cheese. Shower with sea salt and freshly cracked pepper. Whisk together vinegar, olive oil, honey/pinch of salt. Drizzle over layered salad just before serving.

Second -  let's think about pears. All too often overshadowed by fall apples and then winter citrus... in this dish they are the stars! It's a savory spin for the pear with olive oil, salt/pepper and tangy goat cheese.  Make this as an appetizer, a side dish, top it on a salad, or save it for the finish and drizzle it with cream fraiche or a dallop of vanilla ice cream!  (I even like to eat it for breakfast!)


Roasted Pears 

Bosc Pears (best for roasting)

Sea Salt/Freshly Ground Pepper

Olive Oil

Goat cheese, crumbled

Slice pears.  Place in single layer in baking dish.  Drizzle with olive oil, season with salt & pepper.  Roast  in 400* oven for about 10 min, or until pears start to soften (you don’t want them mushy).  Top with crumbled cheese. Serve immediately.

Third - let's elevate the humble cauliflower with a little roasting! 

Roasted Cauliflower w/two cheeses (serves 4)

1 head cauliflower

½ Spanish onion

1 clove garlic

3-4 T olive oil

salt and pepper

2 oz. goat cheese

2 oz. Monterey jack

2 Tbls. panko

1 Tbls olive oil

Preheat oven to 425*. Core and slice cauliflower flowerets.  Place cauliflower along with sliced onion on baking sheet.  Add chopped garlic.  Drizzle with olive oil.  Season with salt & pepper.  Roast for 20 min.  Remove from oven and place ½ the roasted cauliflower in 8” shallow baking dish or cast iron skillet.  Top with ½ the goat cheese and ½ the Monterey jack cheese.  Repeat layer.  Top with panko and drizzle with olive oil.

Place in 425* oven for 10 min.  Serve hot.
