1 15 ounce can refried beans
12 medium to large jalapenos (or mini sweet peppers if you don't want heat)
1 cup cheddar or monterey jack cheese, shredded
1/2 cup real bacon pieces
1 cup My Brother's New Mexican Green Chile, Fire Roasted, House (Mild, Medium, or Hot), or Helen's Rustic Original (Mild, Medium, or Hot) - divided in half
1/2 cup mayonaisse
Cap, seed and de-vein peppers. (to remove some heat, soak cored jalapenos in milk for an hour or overnight. Rinse and dry before stuffing)
Combine the refried beans with cheese, choice of My Brother's Salsa, and real bacon pieces. Stuff* each jalapeno and place** in jalapeno grill. Top with the caps. Heat full grill, but turn 1/2 burners off and place the jalapeno grill over indirect heat. Cover and grill for about 20 minutes. Serve with Creamy Salsa Sauce.
*If you have some mixture left over, place in small baking dish and bake 15-20 min in 375 oven til bubbly. Serve with My Brother's Corn Tortilla Chips.
**if jalapenos are too slender for holes in jalapeno grill, just skewer with a toothpick across the shoulder of the jalapeno.
My Brother's Creamy Salsa Sauce
Whisk together 1/2 cup mayonaisse and 1/2 cup My Brother's Salsa (New Mexican Green Chile, Fire Roasted, House, or Helen's Rustic Original)
