  • 12 slices of thick bacon, cooked to desired crispness

  • 1 1/2  cups whole kernel corn, charred

  • 2 avocados sliced

  • 2 small tomatoes diced

  • Arugula or spring lettuce mix - your choice!

  • 4 ounces goat cheese, crumbled

  • 8 ounces sour cream, mayo, or greek yogurt

  • 1 (16) ounce jar My Brother's Fire Roasted Salsa or New Mexican Green Chile, House or our small batch Hatch Green Chile

  • 6 flour tortillas (8 inch) - fresh if you have a local tortilleria!

Cook bacon to desired crispness.

Char corn in hot skillet. Slice avocado, dice tomato. Warm flour tortilla in skillet or on grill.

For la crema: mix your choice of mayo, sour cream or greek yogurt with My Brother's salsa ratio 2 to 1. 

To assemble: layer flour tortilla, charred corn (1/4 cup each), cooked bacon (2 slices), greens of choice, avocado, la crema, goat cheese, and My Brother's Fire Roasted Salsa.
