6 corn tortillas

vegetable or olive oil spray

6 large eggs

salt/pepper

1 cup baby spinach leaves

1 tablespoon olive oil

4 ounces goat cheese crumbled

My Brother’s New Mexican Green Chile Salsa, Hatch or House

3 scallions, chopped

Optional: 6 slices of bacon, cooked and crumbled

Warm corn tortillas on griddle or skillet and wrap in kitchen towel and place into ziptop bag.  Spray a large skillet with vegetable spray and heat over medium heat. Crack eggs one at a time and place into heated skillet.  Cover with lid (see through lid if you have one!) Keep on medium heat and let eggs cook til yolks are set but not cooked solid, whites are cooked through (about 3 minutes).  

Toss spinach leaves in olive oil and season with salt/pepper.

To assemble: Top each warmed tortilla with spinach leaves, one egg, cooked bacon slice (optional), My Brother's Salsa, crumbed goat cheese, scallions. Season with salt and pepper.
