12 taco shells
1 pound ground beef
1 tablespoon olive oil
2 tablespoons water
Taco Seasoning (see below)
8 ounces cheddar or pepper jack cheese, shredded
1 16 ounce jar My Brother’s Black Bean Chimayo Salsa
fresh cilantro or fresh scallions
1 tablespoon chile powder
½ tablespoon cumin powder
1 teaspoon sea salt
½ teaspoon granulated garlic
Mix ingredients in small bowl. Store in airtight container until ready to use.
In skillet brown beef in 1 tablespoon olive oil. Drain. Add remaining ingredients and stir to mix well. Let simmer for about 2 minutes. Remove fom heat.
Arrange taco shells in baking dish so they are upright. Divide taco meat into the shells. Top each with shredded cheese then My Brother’s Black Bean Chimayo Salsa.
Place in a 350* oven for approximately 10 minutes. Garnish with scallions or fresh cilantro and serve with sour cream.
