2 tablespoons olive oil

½ cup onion, diced

1 teaspoon garlic, minced

3 cups roast turkey, diced or shredded

1 16 oz. jar My Brother’s Black Bean & Corn Salsa

4 cups turkey or chicken stock

2 tablespoons chili powder

1 teaspoon ground cumin

Salt to taste


Garnish:  shredded cheese, scallions, sour cream

Saute onion and garlic  in olive oil until softened, add all remaining ingredients and let simmer for 30 minutes. Taste and season with salt.  Serve with suggested garnishes and Fire Crackers.


Fire Crackers:  1 lb. saltines, 1 cup canola oil, 1 tablespoon crushed red pepper.  Place crackers in extra large zip top bag. Pour in oil and pepper. Close and rotate the bag, gently tossing the crackers to coat them and spread crushed pepper evenly.  Rotate bag once every 15 minutes for one hour. Store Fire Crackers in airtight container.
