For Radishes:

2 bunches of radishes

1 Tbsp. olive oil

Kosher salt

Garnish: radish tops finely diced, lime wedges

For Vinaigrette:

2/3 cup My Brother's Cucumber Tomato Salsa

1/3 cup olive oil

1 Tbsp. dijon mustard

1 Tbsp. shallots, finely chopped

Whisk together salsa,olive oil, mustard, and shallots. Chill until ready to use.  (If you like smooth vinaigrette, pulse in mini food processor.)

Wash and trim tops of radishes leaving about an inch of green stalks.  Slice in half making sure each half has half of the green stalk.  Toss with olive oil and kosher salt.  Place face down on baking sheet and roast for 15-20 minutes at 400*.  Remove and drizzle with Cucumber Tomato Vinaigrette, garnish with finely chopped radish tops and a wedge of lime.
