1 lb. onion, peeled and sliced

3 tablespoons butter

1 ½ teaspoons salt

½ teaspoon freshly ground pepper

1 tablespoon sherry or sherry vinegar

8 ounces sour cream

8 ounces mayonnaise

½ cup My Brother’s Roasted Tomato Salsa

Optional garnish: Bacon bits, chives, fried onion rings

 

Sauté onion in butter, add salt/pepper while sautéing.  Cook until onions soften and just begin to carmelize. Deglaze pan with sherry.  Place sautéed onions in food processor with sour cream, mayo, My Brother’s Roasted Tomato Salsa.  Blend to desired consistency.  Chill until ready to serve. Garnish with your choice of bacon bits, fried onion rings, or chives.  Serve with chips or crostini.
