1 (2 or 2 1/2) pound pork tenderloin

8-10 flour tortillas, taco size

1/2 cup My Brother’s Cranberry Orange Salsa

1/4 cup soy sauce

1/2 teaspoon salt

1 tablespoon olive oil

15 ounce can white hominy, drained

8 ounce cheddar cheese, shredded

scallions, chopped

Optional:  Avocado slices


Cut pork into thin strips. Toss in mixing bowl with soy sauce, salt and My Brother’s Cranberry Salsa. Heat oil in skillet and sauté 1/2 the pork at a time so that it has room to crisp up and carmelize and not steam, about 2-3 minutes. Set aside and sauté remaining pork. Add hominy and cabbage and stir to heat through and wilt the cabbage just a bit. Return crispy pork to skillet and warm through. Divide onto warm tortillas and cheddar cheese. Garnish with scallions and additional Cranberry Orange Salsa. Avocado slices optional.
