Ingredients for Taco Filling:

2 pounds lean ground beef

4 tablespoons taco seasoning

½ cup My Brother’s House Salsa

Salt to taste


Ingredients for Waffle:

1 ½ cups flour

1 cup cornmeal

2 teaspoons sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons chili powder

2 cups buttermilk

2 tablespoons olive oil

2 eggs, beaten


Ingredients for Taco Toppings:

1 (15) ounce can black beans, rinsed and drained

1 cup whole kernel corn

2 avocados, peeled, diced

2 cups shredded cheese (cheddar or monterey jack)

My Brother’s House Salsa, mild, medium or hot

2 cups sour cream

Scallions, chopped



Taco Filling Instructions:

Begin browning ground beef in skillet over medium heat.  Add taco seasoning, My Brother’s House Salsa and continue browning until cooked through.  Taste and season with salt if needed. Keep warm while you make the waffles.
Waffle Instructions:

In mixing bowl, combine dry ingredients, stir in buttermilk, oil, eggs.  Pour waffles into heated waffle iron (¼ cup for each waffle). Stack finished waffles on oven proof plate and keep warm in 250 degree oven while you’re finishing all the waffles.


To assemble:  Place waffle on plate.  Layer taco filling, black beans, corn, avocado, cheese, My Brother’s House Salsa, sour cream, scallions.  Dig in!


*Chef’s note: Additional My Brother’s Salsa varieties that will work in this recipe:  Helen’s Rustic Original, New Mexican Green Chile, Hatch Green Chile, Roasted Tomato.  If you use Roasted Tomato, bacon would be good add too!
