Peachy Baked Beans

Need a memorable baked bean dish for your next gathering? Smoky bacon, sweet peachiness and savory goodness.… these aren’t your grandmother’s baked beans – so get ready to take a bite into the best baked beans ever….and there’s no going back!

2 (15) ounce cans of navy beans, rinsed and drained
2-3 slices bacon (thick sliced), diced
¼ cup onion, diced (additional for garnish)
½ cup ketchup
½ cup My Brother’s Peach Tomatillo Salsa
½ teaspoon sea salt
2 teaspoons dry mustard (you could substitute prepared mustard)
½ cup water
Optional:  ½ cup shredded cheddar cheese

In 10” cast iron skillet, begin to render the bacon over medium heat, add onion and sauté for few minutes until onion begins to soften.  Remove from heat.  Stir in navy beans, ketchup, My Brother’s Peach Tomatillo Salsa, salt, mustard, water.  Bake in 350 degree oven for 20 minutes.  Garnish with onion and top with shredded cheese if desired. Serve warm.
