Skillet Rice Bake

A one dish wonder made with lots of pantry staples—the ground meat & rice are seasoned with salsa, making it both flavorful and filling, topped by a crispy layer of nachos that give it texture & crunch.

1 tbsp olive oil

1 lb ground meat (turkey, chicken, or beef)

1.5 cups My Brother’s Salsa (Farm Stand, House, Roasted Tomato, Hatch, or Original)

1.5 cups Chicken Broth

1 tsp sea salt

½ cup dry long grain rice

¼ cup fresh cilantro,chopped

Juice of 1 lime

2 cups shredded cheese (cheddar or pepper jack)

2 cups corn tortilla chips

Option toppings: sliced jalapeno, diced avocado, sour cream

Preheat oven to 425 degrees. In a large open-safe skillet, heat oil over high heat then add ground meat and cook until browned, about 5 minutes. Stir in My Brother’s Salsa, chicken broth & salt. When it begins to boil, add in rice; cover & reduce heat to medium low and cook 15 minutes (some liquid will still remain). Stir in lime juice, then sprinkle with ½ cup cheese. Top with chips (cover meat/rice mixture) and top with remaining 1.5 cups cheese. Bake uncovered in oven about 10 minutes or until cheese is melted. Remove & top with cilantro & other desired toppings. Enjoy!
