Green Chile Corn Chowder

Hatch Green Chile brings a beautiful earthy flavor to this corn chowder...try to take advantage when it is in season.  If not available, you can substitute Anaheim or Poblano

(yield 6 cups)

2 tablespoons of olive oil

½ cup of onion, chopped

1 clove of garlic minced

2  or 3 Hatch green chiles-roasted, seeded, chopped

2 cups of corn, frozen or fresh

2 medium potato, peeled and diced (golden Yukon)

½ cup My Brother’s Hatch Green Chile or Farm Stand Salsa

1 teaspoon salt

3 cups half & half or heavy cream

My Brother’s Corn Tortilla Chips for garnish

Saute onion in olive oil until softened  Add, garlic, roasted chile,corn, potatoes, salt and My Brother’s Salsa.  Cover and simmer on low for about 20 minutes until potatoes are tender.  Stir often.  Stir in half and half , heat through.  Don’t boil. Top w/crushed My Brother’s Corn Tortilla Chips.

Cook’s Note: also delicious to add a cup of cooked chicken, shrimp or lump crab when adding half & half!
