Crunchy Breakfast Taco

Need a quick morning or evening bite for you or your kiddos...this is it! Most breakfast tacos are made with soft flour tortillas...but we love the crunch using corn tortillas.

8 taco shells (or tostada shells)
4 large eggs
8 ounces shredded cheese, cheddar or Monterey jack
My Brother's House or Farm Stand Salsa
8 slices of bacon, cooked and crumbled (or breakfast sausage, browned and drained)
sour cream. Scallions for garnish optional

Scramble eggs.  Fill taco shells with scrambled eggs, cheese, bacon.  Line up in baking dish and place in 350 degree oven for five minutes or cheese melts.  Serve with My Brother's Salsa and sour cream.  Scallions for garnish.
