Fried Egg Taco

Whether it’s breakfast time or Taco Tuesday, these Fried Egg Tacos are quick to get on the table.  Savory corn tortillas filled with tangy goat cheese, fresh spinach, and that glorious velvety yolk fried egg!

6 corn tortillas

Spray vegetable or olive oil

6 large eggs

salt/pepper 

1 cup baby spinach leaves

1 tablespoon olive oil

Optional: 6 slices bacon, cooked & crumbled 

4 ounce goat cheese crumbled

My Brother’s Farm Stand, Hatch or House Salsa

3 scallions, chopped

Warm corn tortillas on griddle or skillet and wrap in kitchen towel and place into zip top bag.  Spray a large skillet with vegetable spray and heat over medium heat.  Crack eggs one at a time and place into heated skillet.  Cover with lid (see through lid if you have one!) Keep on medium heat and let eggs cook til yolks are set but not cooked solid, whites are cooked through (about 3 minutes).  

To assemble:  Top each warmed tortilla with spinach leaves, one egg, cooked bacon slice (optional), My Brother’s Salsa, crumbled goat cheese, scallions.  Season with salt and pepper.
