3 Ingredient Shredded Chicken

It doesn’t get any simpler than this: Add three ingredients to a slow cooker and in a few hours, you have highly flavored, tender shredded chicken & endless possibilities to feed a crowd—soft tacos, enchiladas, nachos, chicken tortilla soup, tostadas, or serve on buns.

Serves 6

Ingredients:

4 Chicken Breasts

1.5 cups My Brother’s Farm Stand Salsa, about 3/4 jar (House, Roasted Tomato, Rustic Original, or Hatch Salsa also work)

1/2 cup Chicken Broth

1 tsp salt (to taste)

Optional Toppings for Tostadas or Tacos: sliced avocado, shredded cheese, fresh cilantro, fresh lime juice, sour cream, sliced jalapenos, additional My Brother’s Salsa.

Instructions:

Combine all ingredients in a slow cooker over low heat & cook about 4-5 hours, stirring occasionally, until chicken will easily shred with two forks. Shred chicken & stir into remaining liquid.

Serving ideas: Layer chicken on tostada shells & top with shredded cheese & avocado, make soft tacos using small flour or corn tortillas, roll up on large flour tortillas & shredded cheese to make enchiladas (top with shredded cheese & bake 20 min at 350); make nachos by layering tortilla chips with shredded cheese, black beans, & shredded chicken (broil until melted); make into tortilla soup, serve on buns as sandwiches.
