Black Bean Pasta Salad

Festive pasta salad made with our Black Bean & Corn Salsa or Black Bean Chimayo is great alone or as a side.

1 cup pasta uncooked (fusili or rotini)
1/2 - 3/4 cup olives (ripe black, kalamata, green w/pimento - your choice!)
1 jar of  My Brother's Black Bean and Corn Salsa or Black Bean Chimayo Salsa, drained
4 ounces Havarti, Monterey Jack or Pepper Jack, cubed
1-2 tablespoons olive oil
1 cup each Zucchini diced, yellow bell pepper, diced avocado, cherry tomatoes, halved

1 tablespoon fresh cilantro chopped

Salt & pepper to taste

Cook pasta according to directions (al dente). Drain and gently toss with olives, My Brother’s Salsa, cheese cubes, olive oil, zucchini, bell pepper, avocado, tomato, chopped cilantro. Season with salt & pepper. Chill until ready to serve.
