Green Chile Stew

If you’re tired of the same ‘ole beef chili with beans that you can get anywhere...then you MUST try our Green Chile Stew. This stew is filled with chunks of savory pork and potatoes. The roasted green chiles add a beautiful earthy taste like no other...if you’ve ever been to New Mexico, you know what we’re talking about! The broth is seasoned with our salsa and makes it a ‘quick to make’ but tastes like it’s been on the stove for hours delicious-ness. Topping it with shredded Monterey Jack and fresh cilantro makes it more magical!

2 tablespoons canola oil

2 ½ - 3 lb. pork tenderloin, dice into ½” cubes

1 large onion, grated

3 cloves garlic, minced

4 tablespoons green chile, roasted, peeled, chopped (can use can variety)

6 cups chicken stock

1 cup My Brother’s Farm Stand, Hatch, or House Salsa

1 lb. golden yukon potato, scrubbed and diced in ½” cubes

2 teaspoons kosher salt

Monterey Jack Cheese

Fresh Cilantro

In large dutch oven heat oil over medium heat.  Add diced pork and cook for about 5-10 minutes.  Add grated onion,garlic and green chile.  Cook additional 5 minutes.  Add stock and salsa. Bring to boil, lower to simmer and cover. Cook for 1 hour.  Add diced potatoes and salt, return cover and continue to simmer for 15-20 minutes.  Ladle into bowls and top with shredded Monterey Jack and fresh cilantro.
