Breakfast Burger

This classic American favorite is not just for lunch and dinner anymore.  Breakfast sausage infused with My Brother’s Original Salsa is just the beginning of how this burger stacks up! Serve with a side of breakfast potatoes.

1 pound bulk breakfast sausage
1/2 + 1/3  cup My Brother’s Original Salsa
6 slices Havarti cheese (or Monterey Jack/Pepper Jack)
6 slices of sour dough bread (thick slice/toasted)
red onion slices
petite dice dill pickle
6 eggs (sunny side up)
flaky sea salt to taste
pepper, freshly ground
2 tablespoons prepared mustard
1 cup mayonnaise

To make salsa sauce: In small bowl combine 1/3 cup My Brother’s Original Salsa, mustard, mayonnaise.  Stir to blend well.  Keep in refrigerator until ready to use. 
 
In small mixing bowl, combine sausage and ½ cup My Brother’s Original Salsa.  Shape into 6 patties.  Cook in skillet over low medium heat until cooked thru. Toast the bread while patties are cooking.  Place on warm platter and spread with salsa sauce.  When patties are done, top with cheese and transfer to toast slices. Add onion slices.  Cover to keep warm and help cheese to melt while you prepare the eggs.  In skillet coated with cooking spray or butter, cook eggs.  When eggs are done, place them carefully on top of burger/cheese, sliced onions.  Season with salt/pepper and garnish with diced pickles.
