Flour Tortillas

Nothing compares to homemade tortillas - once you make them there’s no going back to store bought!

6 tablespoons butter flavor shortening

2 tablespoons unsalted butter

1 cup water

2 ¾ - 3 cups flour

1 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon turmeric

1 teaspoon baking powder

In small saucepan melt shortening and butter, add water and heat to just before boil.  Pour warm mixture into mixing bowl.  Combine 2 ½  cup flour with salt/baking powder/cumin/turmeric reserving ¼ cup flour. Using a dough whisk, gradually add dry ingredients into the warm shortening/water mixture til it comes together. Shape into ball with your hands - add reserved flour if sticky. Cover with damp towel and let rest 20 min. 

Shape into approx. 20 golf ball size dough balls.  Cover with damp towel. Let rest 20 min.  On floured board, roll out and covered with clean kitchen towel to keep from drying out.

To cook: Griddle on medium heat until tortilla starts to puff up, turn and toast other side. Lower heat if starting to burn.  Stack in between layers of clean kitchen towels to keep warm.  Once cooled - store in refrigerator about a week.
