Margarita Bars

(a lime twist on a classic lemon bar - perfect finish for all your spicy bites)

Crust Ingredients:

2 sticks unsalted butter, room temp

one half cup sugar

2 cups flour

one half tsp. kosher salt

Filling ingredients:

7 large eggs at room temp

3 cups sugar

zest of 2 limes

1 cup lime juice

1 cup flour

Crust:  Cream butter & sugar in food processor until light & fluffy.

Blend flour and salt into butter until just blended.  Shape into a flattened disc.

Press dough into a 13x9x2 baking sheet with moistened hands.  

Press it up on sides about an inch.  Chill. Preheat oven to 350* Bake for

 15-20 minutes until slightly brown.   Cool Completely.

Filling:  Mix all filling ingredients, eggs, sugar, lime zest, lime juice,flour  

together.  Pour over cooled crust.  Put in a 350* oven for 30-35 minutes.  

Cool.  Sprinkle with powdered sugar.  Cut into squares.
